Historic producer of Cremant and Vouvray in particular. Their range of Cremants come from 3 key producing areas in the Loire Valley; Touraine, Anjou and Saumur. This covers a variety of soils, mainly chalk, limestone, schist and sandstone, which suit the blend of grape varieties used in this blend: Chenin Blanc and Chardonnay. The Impetus is their vintage sparkling and as such spends more time ageing in wood, in this instance 36 months in barrel.
On the nose: The bubbles are fine and persistent. The nose opens up with notes of candied lemon, yellow peach, mint and pastry cream, enhanced by hints of grilled toast and mocha.
On the palate: The effervescence is particularly creamy. Ample and smooth on the palate. Long aftertaste with aromas of dried fruits.
Food pairing: sea bass carpaccio with basil, morel ravioli, or an apple and apricot crumble.
