Pasotismo is the first collaboration wine between Paso-Primero and Batan de Salas, the winery they work closely with in Spain. It’s the result of working over five vintages closely with winemaker Nicolas Brun Aguerri, fine tuning our shared belief in fruit-driven, soft, smooth and deliciously drinkable wines.
Made in the "Apassimento" style from late-harvested, ripe grapes, Thomas began by experimenting with barrel fermenting Merlot, Garnacha, Syrah and Cabernet-Sauvignon and went from there. He aged each variety on its own in 500L brand new french oak barrels before blending them together to create Pasotismo 2018. It's a big, rich wine with soft raisiny fruit on the palate and juicy tannins.
They are so proud of this wine that they have detailed exactly how they created it on the back label, right down to the exact day every step was done. Every vintage will be slightly different as we use different grapes and a different process, but the Pasotismo project is here to stay and this exciting, luxurious and incredibly delicious wine will be made every year.
